Not saying this will work out for you but...
Bid DCA 737. Still new equipment and therefore your training freeze is not in play. Then hope that the next vacancy bid there are 737 FO IAH open.
Good luck.
And if it makes you feel any better. My Newhire class only had 737s and I was the 8 ball. Next few classes had 737 IAH and then nothing for 18 months except the Airbus. I was stuck commuting. We have all been in your shoes. Just keep in mind we have another large widebody bid in November and you might be happy with the movement on that one.

FWIW DCA 737 window apparently closed prior to this last bid.

I was told to bid the 320 when hired back in April if I wanted IAH due to the pending 737 displacements there. I could have been awarded IAH on the 737 the past 2 vacancies while the 320 is now going senior in IAH and I can't get in for the foreseeable future. I've already learned my lesson in regards to crew planning advice here at United in the first 6 months. It's definitely a crap shoot.

New hires are locked into their aircraft for 2 years. Except if they move to a higher paying one. So guys now are getting 737/320 in class. They can't switch between those two but they could take a 756 bid any time or eventually 777/787 etc that pays more without the freeze.
But guys who got 756 in new hire class could not bid down to the 737/320 since it paid less. The only way around that was new category dca737 as mentioned, but that opportunity has closed because it is only available for 6 months.

That is 99.9% correct.
In addition, the company has the option to waive the freeze at their convenience and has done so repeatedly during the last two years. I have no idea why and whether it was a repeated mistake and know several new hires that have surprisingly switched from the 737 to the 320 or vice versa.
There is absolutely no guarantee they will do so in future bids but it's apparently a possibility.
It's the old adage: If you never bid for it you won't get it.
