How long would it take a new dude off the street to bid the west coast?

As long as hiring and retirements continue, not long at all. Both LAX and SFO go junior in the bottom half of the FO rosters while the top half is a different matter.

My guess is a lot of Airbus FO's will be bidding 73 Captain and open up a lot of Airbus FO slots. Fingers Crossed!
But note that the junior UA pilot to bid 737 Captain was seniority number 4893 on the new list. A long way from Airbus FO.

Default F/O Sr to 4893

On UAL side F/O's senior to 4893 from ISL list.

5 - 320 F/O
187 - 767 F/O
604 - 777 F/O
316 - 747 F/O

Any movement up will cause trickle down and open 320 F/O's slots.

No PRAYER for most A320FO's to hold Captain. When the bids are put out for the 737 that the LUAL folks can bid on, I suspect it will go quite senior.... for awhile anyway.
