I thought the "B-plan" 16 percent was separate from the annual 401k contribution limits. You can contribute a percentage of your income to a 401k and there is no matching or anything, but my understanding was that your personal 401k was what is subject to the annual IRS max
I don't think this answers your question but the B Plan funds go into a Schwab account with very limited investment options...like 25 mutual funds. It is possible, and I have done it, to set up a PCRA on schwab.com and have your $$ go into a brokerage account. You can then use that to invest in virtually any equity in the world outside of UAL stock.
I'm not an expert so call the plan administrator after you start.
