Nobody, especially nobody junior, is getting any premium pay at the moment.
In general, A320 does more multi-leg days but 2-3 legs/day is probably the mode for both, especially on junior trips.
The 737 bases are 200-300 FO's. 320 is 50-100. I suspect that would give the flexibility edge to the 737.
And it's very easy to move between bases should you want to try both. It is not easy to move between fleets.

G-Line (the seniority number guaranteed a line) in SFO is more junior on the 320 than the 737 for February (approx. a September hire). That said, things swing back and forth so that may not be true in future months. Holding a line vs. reserve gives the max schedule flexibility but keep in mind that the 737 base is bigger so long term that may provide more opportunities.

There is no schedule flexibility. Can’t drop because CS can arbitrarily raise the reserve floor to whatever they want (every day is red), so that gets rid of trading too.
the only thing you can do is a direct pilot to pilot trade

It is true that the company manipulates required reserve levels. There are no contractual restraints on this. It is entirely at company discretion. Frequently every or all almost all days show red.
This does not, however, totally prevent trading or dropping. You can trade within your same footprint or trade for days with worse staffing than the ones you’re on. Still a very limited and frustrating situation.
