Bit why shouldn’t he take the 756 to get to SFO. It’s the most Junior 756 base and it will not take him long to get there..
To answer the OP question, no it will not a big jump going from 737 to 756.

1) you can always move to bigger planes; it’s harder to move down. It’s just foolish to give up two years of flexibility to save maybe 2 months of commuting
2) the sfo 756 base is quite small. 320/737 roughly 2x and 3x bigger with more variety of flying. New hires will have more flexibility with a bigger category.
2 is the biggest reason. EWR 756 would be a different story.

If following the general consensus; bidding NB during Indoc, would it be reasonable to expect to be able to get ORD during training or sometime within the first six months or so? I'll have to commute, initially, and the prospects of not having to worry about too many hotel rooms or a crash pad on my own dime is the biggest consideration at the moment.

Do you mean is the 756 more challenging than the 737? No, they are much easier to fly and similar philosophies. The 767-400 even has the same displays as the 737 + EICAS. Oh and the spoilers actually work.

Newhires on the 737 and 320 have been getting ORD awarded while still in training. The most junior 737 FO awarded ORD on the May bid hasn’t even taken their type ride yet. Plan 3 months from award to activation date.
Expect IAH or EWR as your initial class award if you get the 73 or bus.

If I wanted to fly the 756 in EWR and was willing to get based in SFO temporarily (less than 2 mo ideally) would bidding that and transferring in a vacancy award be a better call than just going 737 EWR and bidding upward eventually?

Really only you can answer that. The timeline that you say is probable, but not guaranteed. If you want to guarantee that you’ll be in 2 months or less and are able to bid EWR on a NB during BI, that’s the sure-er bet. You can bid up at any time, so worst case is another trip to TK.

756 trips out of EWR are mostly augmented and mostly 3-days/2 legs. 737 trips are much busier.
There’s an argument for doing 737 for a bit to learn the united system.
But setting that aside, it should be a quick move sfo>ewr/dca possibly even prior to ioe
