Congrats and welcome aboard. I'll try to answer some of your questions.
1. Does TSA restrict other pilot employment (Part 91 for example)?
You are restricted on all commercial flying as it affects the max hours you can work under 117. It does not restrict you from poking holes in the sky with your friends.
2. Buddy passes on United (want to be based in DEN hopefully)?
According to our benefits package, we don't get buddy passes just the option of a second enrolled friend.
3. Why does the Vmo have no speed listed between 8,000 - 10,000ft?
It increases linearly from 250 to 320 knots from 8,000-10,000'. In the US, you will never go above 250 below 10,000' and the ops specs also restricts you. Embraer designed it that way because in other countries you can exceed 250 below 10,000'.
4. Why the hell would you open the Direct Vision Window at upwards of 140 knots??!!
Other airplanes have this limitation and it is primarily due to ditching. Usually a QRH will call for opening the window prior to ditching to allow egress.
5. For engine start limits on the ground, why does it have the 5 on, 5 off, then below 1 on, 1 off? Is the 5/5 cumulative but it's really just limited to 1 minute on at a time or could you theoretically dry motor it for 5 minutes?

As for not really worrying about these, the e-mail said to have these down cold day one, and that's what I intend to do. It'll be way easier to have these in the bag so I can cram all the other stuff they throw at me in

Again, unless we start going back there this summer, this is nothing really to complain about. I think 3 people getting robbed is enough criteria of getting out of a hotel. Ever time it to see how long before you get accosted by panhandlers? My shortest time was 30 seconds.
Also, Beale St is a tourist trap. I preferred Main.

It might be the many people who didn't have hot water in their rooms for their 0500 show. Or it could have been the people who spent 10 minutes trapped in their elevator going between floors 8-12. Or it could have been the guy who got his keycard stolen out of his pocket and had his room ransacked. Or it could have been the guy who had his room broken into in the middle of the night and had his wallet stolen. Or there was that house keeper who gave her bf the master key and he was going room to room picking through personal belongings. Or it's that the hotel is a rundown piece of garbage. And there's nothing that says 'this is a safe place' like a van driver picking you up with heat strapped to his hip.
All of that is completely irrelevant because as of early January, TSA is going to stop flying to MEM.

Not saying I doubt someone's room was broken into in the middle of the night and had their wallet stolen, but I dout someone had their wallet stolen in the middle of the night from their room.

If you think about it there was nothing around the holiday inn either unless you're an alcoholic. There's plenty of stuff around the new Hilton even a movie theater. Beale street was fun while it lasted but you could tell crews were getting tired of it.

The movie theatre is quite a walk from the Hilton and kind of dangerous. Worked in Memphis for a while so I am very familiar with downtown Memphis and Germantown. If you think the panhandlers will go away they won't. Memphis has the most pandhandlers per capita of any city I have seen. When I lived there you used to run into them at the shopping center by the Hilton all the time. Panhandlers and Memphis are like kibbles and bits.

Being from Detroit, I can tell you that I feel much safer in Detroit than Memphis. The unsafe areas in Detroit don't have hotels and are no where near the airport. I have never been in an area of Memphis that I have felt safe to walk around at night other than Beale Street which is only one block in the entire city.
