You just have to be "Current". How much flying have you done in the last 90 days for example? I know for some that have applied, they want people who are current, whether its a BFR/IPC, etc on day 1 of class.

Yeah legal currency is the minimum to apply...they don't mention that but it's kind of assumed when applying for a professional pilot slot.
Beyond that, recent flight experience (or lack thereof) will be considered in the context of your overall experience. I don't think there's a hard number, but they would be more forgiving of lack of recency in a multi-thousand-hour turbine pilot with years of experience as opposed to a 1500-hour CFI who dropped out of aviation for five years.
Unlike some other places, SKW does not automatically exclude high-time pilots. They actually assume that you have enough experience to know what you're getting into, but they do also want to get a sense that you're not looking to get 121 current and then bail in four months. They'll hire retired Colonels if they think they'll be happy at SKW for a while, and can "play the game" as FO's.

I know circumstances change, but I was hired by SkyWest back in 2008 after my company went bankrupt, then ground school was cancelled (economy tanked), I was in the SkyWest pool for 2 years (did not hold a flying job - not current), then was offered a class date (not current). They didn't seem to be hung up about the currency thing. Worst case, go hop in a plane and play the currency game.

So I applied and got the email with a PDF asking for additional info to send back. It's been over 2 weeks now with no further contact. Is that normal, or should I be sweating? Anyone know if they are starting any new classes in 2012, what about news for 2013? Thanks!

Yes the reply wait time on the PDF is normal. As far as I know, there are new hire and upgrade/transition classes for each aircraft scheduled through January 2013 with no plans of slowing next year.

I interviewed on 11/6 and I thought it went good. I have been checking my emails every 5 minutes since than. Do not ask me how I do it while asleep.
So is it true that if you see a giant USPS package sticking out the side of the mailbox you can then safely assume you have been hired as you walk towards it?
Or might you get an email first?
BTW - If any of my fellow interviewers on 11/6 are reading this than PM me. I was the last one in to the Tech/HR and when I got out at 5:30 pm everyone was gone.
