But having the same guy in the control seat of an aircraft the next day, with only one other person in the flight deck, is less of a risk?

One could argue that having a third, highly-vetted individual in the flight deck makes it even MORE secure.

Would they walk off all at once? No. But you'd see a big exodus over about 24 months as folks dust off the resumes and non-pilot skills. Maybe 10% that would either have family circumstances or old enough and wealthy enough to just hang it up. The rest would have to move to base, although there might be some limited CBA accommodation for positive space commuting.
