United allows you to add a friend instead of a spouse, and then one additional friend if you choose. None of them allow you to substitute for parents.

The airlines audit your travel benefits at any time they feel like. If they catch that they won't be happy with you.

Well if you put a "spouse" "domestic partner" as a friend they can ask for documentation to show that. Ie mortgage, savings joint bank accounts, certificate of proof, etc.

Does purchasing a ZED ticket guarantee you a seat? Is there any way to get a guaranteed seat at a discount? Also, does ZED kick in after 30 days like domestic benefits?

ZED is standby.

United allows you to buy a guaranteed ticket at a discount, but the others don’t to my knowledge. ZED kicks in after 6 months.

By any chance is Emirates, Egypt Air, or Royal Jordanian on the list? I usually travel to the Middle East about once a year, it would be nice to see if I’ll be able to score a ZED fare or if I’ll just have to buy a ticket. Hopefully starting with YX in March!
