Yes, they would most definitely be labeled as scabs. As they should Scabbing is pretty cut and dry; cross a picket line/fly struck work, you're a scab.
I do not have any citable sources now (and don't have time to dig any up now), but I'm pretty sure that most return-to-work agreements include negotiated agreements to re-instate striking probationaries. I'm pretty sure the 500 UAL 'ers from 1985 were brought back. I think there was something about this in those ALPA "Flying the Line" books if you need some good bathroom reading material.
