I hope to never be in the situation where I’m needing to watch fuel on the final approach that’s something to check before taxi, takeoff, at the top of climb and en route/while holding.

That's because the snowflake gives you a 3 degree glidepath to the threshold, not the thousand foot markers. It's very accurate, just not to what you want it to be.

Putting the TDZE at the runway in the FMS should correct that. Like someone else said, it’s aiming for the runway threshold.
