This is a better idea... If you really don't want to be a CFI that's cool; better you avoid it so you don't become a crappy instructor ( no offense) since you won't be into it. If you're not far from 135 PIc mins I'd wait it out and try these two companies...Cape has a decent program and AMF starts in Chieftains and advances you as you progress.
You will undoubtedly need that 10k somewhere else in life if you're still working your way into a first job!(like when you do Regional) Don't let the desperation and unemployment mess with your brain...that's the worst time to be making those decisions.
Do you personally know any pilots who can advise you? If you end up doing this, certainly don't come back here and tell anyone lol

Do Sun Air and the other Caravan operator (Mokuelele I think?) still operate out of the C gates in PIT?
I have no interest going there, I just always enjoyed seeing their aircraft and their "Go Team!" morning meetings on the ramp. I work for G4 and always taxi up next to them, I've just noticed their gates were empty the last few times I was there.

I was offered a class date with Sun Air Express up in PA. Navajos. Requires me to pay $10,000 for training, $2,500 of which can be deducted from pay.
Covers 6 or 7 flying hours and a 2 hour FAA checkride.
That's $7,500 up front to begin training. All to make $12.50 per block hour as an FO. captains start at 55k. Not bad. I'd get there at 135 IFR mins. (1200 hours)
I know pay for training type FO programs are frowned upon, but it is a job offer and it's multi time.
I'm not a CFI and don't plan on becoming one so my options are very limited.
Should I bite the bullet and view it as an investment in my future, or sit tight and wait for something better?

They are still operating the Navajos for now, but they are transitioning the fleet over to the Caravan's which is what pre-buyout Southern Airways flew. Not sure if they are getting brand new EX's or if they are getting used Caravans and if the first one has arrived yet.
Most of the EAS routes in and around PA were up for bid this year and Southern bid on all of the immediate ones 9/10 cities I believe and a lot of the cities have publicly stated they preferred the southern bid, so route security looks promising.
I am actually looking into them right now as a PIC candidate, so if anyone is currently there, please chime in or PM me.
