You have to be qualified to be a PIC (and acting as PIC) to log PIC. I would think not meeting the PIC mins would disqualify you. Check FAR 61.51. Also be aware of what larger operations and airlines consider as PIC time for later in your career. Just being the one flying the leg does not make you PIC in their eyes, even if you are qualified, and they don't want to see it as such. The person with final responsibility who signs for the aircraft is the only PIC time they consider valid. This should be the person listed on the flight plan as the PIC and the one who would make the ultimate decisions in the event of an emergency.

if he is a cfi you can log it as dual recieved than figure how you are gonna explain 1,000 hours dual recieved in your log book .

The idea that the owner may install seats to fix the situation surprises me . It requires faa approval -re weighing the aircraft redoing the w
+balance ( alot of approvals) and will probably necessitate formal training for you and all future sic"s because the insurance company may now require it . seems like alot of work and costs to have you fly sic
As far as someone responding "just log it " ignore that response so you dont ruin your career !
