Yes....You do need to be careful about the pre-made bitcoin mining machines. I have never ordered. But, one does need to do their own due diligence and such.
As for learning about Bitcoins...Read, read, read, and understand...Then read some more...

That is an awesome setup. I have pretty much upgraded all my cards to 7950s. I'm impressed you have 6 cards on one board. I am able to manage 5x7950s to each of my boards but I'm limited by my PSUs (Corsair 1200w.) I used to run 4x on each board and then I started fooling with 5x and it's been working good. So the extra boards I had leftover after I consolidated my cards I just added new cards to. The issues I'm having are 1) The VisionTek 7950s I can not get hashing above 610Kh/s, and my Gigabyte 7950s, which I can get hashing around 650-670Kh/s each, have been going dead quick. One caught on fire which is unheard of. I'm glad I was there when it happened. At least they are all under warranty. My VisionTeks are lifetime.
You're right - 7950s are a beast of a card. They should be going down or catching fire. All I can think is a configuration issue or airflow .PM and we can talk.

The rest of my stash I'm holding very long term. I'm going to wait until the next halving of the blocks which is something like 6 years away. As of right now they are some excellent savings to fall back on if I ever find I'm in a huge jam. You never know. Same thing with all my Litecoin. I plan to hold all the ones I have now at least until February 2015 when the blocks halve for them.
I also bought about thirty 60GH/s ASIC systems from BFL using BTC when BTC was anywhere from $6-25. I still have not received one of them. Thats a good couple hundred grand right there in their pockets I won't see even if I get all 30 systems tomorrow.

Airflow isn't a problem. I actually have them setup in the server room at my work. Cold side and Hot side. I got the IT Guy here years ago into BTC, before the initial spike, and he just took off. He currently has over $500k in BTC at the current price. He said when he gets back over $1million, he will reimburse me for my Flight Training. After all, I did make him aware of it when they were about $0.10 a piece. He actually took a blade center the company wasn't using at the time and started mining BTC with it. It was something like 100kH/s. Now it is completely obsolete but at the time was getting a coin or two a day. The GPU power got into the mix and I didn't make a rig. I regret it. The spike/boom of May-June 2011 happened when it went from $0.70 to $30.00. I started making my rigs in the middle of that upswing. The February-April 2013 Spike/Boom to $267 really paid off for me, although I did not sell many at the top. In fact I sold about 800 of them at $50 thinking it couldn't possibly go any higher anytime soon. If I would have just waited three more weeks I could have had $1.6million. Ahhhh!

Seems like getting in on bitcoin now won't pay off? Looks like the difficulty is at it's exponential growth point and the average joe can't feasibly hop in and even expect ROI. Man, I really should have jumped on bit coin back in 2011-12 when I first heard about it.
