One of my buddies just got the call for an interview at Delta with a 2.18 GPA from a service academy.

Nothing cosmic, about 2,500 Mil hours with no masters and app in about 3 months. His app did look great before the internal rec. My advice have multiple people that have been hired review your app. Another buddy who has far better hours/qual/GPA/masters has not gotten the call it had some issues with his app prior to the rec.

How valuable is the "check airman" box at DAL? What about UAL?

That's not exactly a slouch. I didn't go to the USNA, but at the USAFA 3.0 is a Deans list for a reason. 2.18 at a service academy would translate to about a 3.18 at most civilian institutions. I would certainly hope that Delta understands that.

Everything counts and no major will tell you how their scoring formula works. Put everything on your app and keep working to improve yourself. That's the best advice I can give.

Break up each assignment as a separate job. It gives you more opportunity to give details for each assignment about how awesome you are. Your application score will go up.

I don't know how they look at the GPA in regards to who gets called but I know some of the military guys in my indoc class who did go to an academy had 2.5-2.8 or so GPA. I also have friends from college with 3.6 and one with 4.0 and still haven't heard anything.
