If we are so concerned about fatigue and safety then why don’t we go a step further and evaluate what time people wake up on the first day of the trip and what they do during that day? Seems reasonable, doesn’t it? Perhaps we could all wear i-watches that would track out movements. Then of course we’ll have to do away with red-eyes and early shows. Oh, and let’s make it more difficult to get a medical! Yeah, that’s freakin’ genius.

IMHO, the biggest threat is not sudden incapacitation. The biggest threat for near mid 60's and above pilots is fatigue.
There are plenty of sharp guys who could pass a sim check with their buddy company Examiner at 10am after a good cup of coffee. Not so much nearing the 14-16th hour of a duty day very late.
Seen enough guys at that age run out of gas and sleep patterns get more difficult to adjust.
Give them the 0200-0600 Sim slot and post the results.
