I think this varies by aircraft type and company policy. Southwest is pretty new this automation thing, so it seems whatever the Boeing FCTM recommends is what they mandate in the FOM. The 737 FCTM says autothrottle o.k. for takeoff and climb when hand flying, but recommends that only to use autothrottles with the autopilot engaged for descent/approach. So, we have "all on" or "all off" for autothrottle/a.p. use in descent/approach.

Just curious what other 737-700/800... policies are at other airlines??

That's exactly the same policy at Alaska, "all on or all off".
