I bought two pairs of Eccos over about 20 years. The second pair lasted close to ten years and was going strong before I switched to shoes with more cushion due to an old injury coming back to haunt me.
Yes I'm too lazy to tie my shoes in the morning, especially since nice shoes tend to come untied if you walk the length of the terminal (I'm sure they stay tied long enough to walk from the limo to the penthouse elevator in the lobby). I'm also too lazy to double-knot them, and then to un-double-knot them later.
The Eccos looked just fine with occasional polish.
Maybe they have quality issues these days?

I don't know if this qualifies as "minimalist", but if that equates to "best value", then I don't think you can beat this deal.
https://www.amazon.com/Clarks-Tilden-Cap-Oxford-Leather/dp/B00SMJO930/ref=sr_1_5?crid=35LX9RXKAICJJ&keywords=oxford%2Bsh oes%2Bfor%2Bmen&qid=1702894122&sprefix=oxford%2Cap s%2C110&sr=8-5&th=1&psc=1
There's a handful of options on Amazon. I tried them one time and they are OK. For comfort, I think it's worth it to buy a shoe with a slightly higher quality of leather, but if minimalist equates to minimum price, I don't think you can beat the prices at Amazon. Reviews are very good as well.

I understand they don't share the same looks as high end dress shoe but if they can offer foot health benefits while remaining FOM compliant I don't see the issue. But obviously some do.

Tell us you drive a Prius and are vegan without telling us. Also, I think the video posted you found offense to wasn't appropriate. A gay dude would never wear those ugly ass shoes.
Minimalist is a catch all phrase for a shoe that allows our feet to be feet. It lets your feet handle the tasks modern shoes are advertised to handle but fall short of. For example - arch support. Arches don't need support. Arches are the support. You are unlikely to see a bridge that has arches but also has additional arch support. That said they aren't right for everyone nor was I trying to sell the ideas to others.

I didn't take offense to the video. But considering the number folks barking about professionalism - it seems it was worthy of the point out.
