Weave and/or yo-yo or overhead orbit, they can't fly at 75kts but they can stay in proximity by a number of methods and bring guns to bear on the target during the turns.

Completely unrelated, but we periodically get intercepted over France by a Mirage or two. They will often come sit on the wing of the mighty Herk, wave, take pictures, etc. I, of course, will always, very slowly & subtly, retard my throttles little by little while waving enthusiastically, taking pictures and watching their AOA increase. They always take off in a 'huff' when they figure it out.
