Expressway Visual 31 into LGA and any other approach that takes you south on the Hudson usually ends up in a nice left turn around the southern tip of Manhatten for everyone on the left side of the airplane to see.
I flew with a captain that was about to begin the left turn around NYC and made a PA something like "alright if everyone gets over to the left side of the aircraft you will have a great view of downtown Manhatten" then he rolled into the left turn and said "NOT ALL OF YOU AT ONCE!!" on the PA.
VOR 13L/R into JFK (formally known as the Canarsie approach). One of the few approaches where these 12+ hour flights come across the pond with full automation from moments after takeoff, and ironicly end with old stick and rudder skills to get the plane on the ground (its fun to watch the 74's overshoot final when there is a stiff wind from the south, and have to correct with 40 degrees of bank at about 800 feet!)

The HI-ILS to Roswell is easily the most challenging and famous procedure in the United States (aka "The Widowmaker"). Drive toward the Tacan, turn before the cone of confusion, 2 course settings, an arc to a lead radial, change to the localizer, and 5 step-downs from 15,000 ft.

Straight in visual to runway 15 at Roanoke. Brings you right over a couple of ridgelines and if you fly 3.5 glideslope, you can wave to hikers on the Appalachian trail as you fly past one of the peaks.

Left Downwind Rwy 24 at 4I0. (Williamson, WV) You loose sigt of the approach end of the runway when you are abeam the numbers, and fly up a canyon like area on base to see it again.

Flying from USAF Academy to Colorado Springs airport and doing a fixed card ADF approach in an Aero Commander with suction powered instruments (1976) in a snow storm.
Do any of these new guys know how to "cage" the attitude indicator and realign the gyro with the mag compass ?

4L into BOS is fun if you get a left base. Normally rolling out just about over the threshold. Pretty cool with the tops of the skyline above you off the right side.
33R into Boston is fun too. Normally have to have a nice headwind though! (2500' x 100')
