1) Pure fun: Stearman with inverted fuel system
2) Since everybody is saying PC-12 (and I would likely do the same), I'm going to have to go retro and say DHC-2. Any airplane with an oil fill in the cockpit is alright with me

1. Giles (hands down, the sickest roll rate EVER)
2. SU-29, except with the engine rotating to the right so i can do the hammerheads and rolls to my normal direction (so annoying)
3. Extra 300L (maybe 400+ hp one day)

And then I'd use the money I saved by not buying a PC-12 to get me one of these:

Although, looking at some other pictures, it looks like Vyse on that thing is about 4 kts slower than Vmc. Wonder how that works. Lots and lots of rudder, I assume, even on days with good Vmc characteristics.
