You might also keep an eye on the CHT. I rarely clear the engine on a power-off 180 since you lose only 1000 feet. But in a simulated engine out, you clear every 1000 feet or so to prevent shock-cooling the engine (especially w/ student pilots who aren't as good at their airspeeds).

Keep it a hair high, and then just slip towards the end when you realize you made it, but are long. Slips are your friend, especially when say during a real emergency you happen to be fast or high. Just remeber to push with a slip to keep what speed you have or you'll bleed speed like crazy in a cross controlled situation...with the obvious results if you let it go too far.
