The reg does not require a CFI to log a lick of time in their own logbooks. They MUST sign the student's logbook, but they don't have to keep a copy in their own logbook.

Now, other regulations might require a CFI to log landings and approaches used for currency, but that is NOT 61.189.

Correct, CFI's do not have to log dual given. You probably should though so that in case there any legal issues down the road, you'll have documentation.

The first as you stated is "flight training" which must occur in flight. The second is "ground training" which must occur on the ground. The third is "pilot time" which includes training given in sims and FTD's. To quote the reg:

"61.1(12) Pilot time means that time in which a person—
(i) Serves as a required pilot flight crewmember;
(ii) Receives training from an authorized instructor in an aircraft, flight simulator, or flight training device; or
(iii) Gives training as an authorized instructor in an aircraft, flight simulator, or flight training device."

I admit I don't log time I've given while teaching ground, but I do track and log time I've given in simulators and approved level 3, 5, and 6 flight training devices.

By all means log sim instructor time, but make a seperate column for it and don't mix it up with total time or dual given flight time. Regardless of what the regs say, potential employers assume that your total time and dual given is in a real airplane. Mixing sim time in with those will just create confusion for you when you fill out apps and for an interviewing who is auditing your logbook.

I don't really have anything important to add, other then complimenting Squawk on his/her amazing avitar.

I'm rollin' around on the floor. I love it! I think I'm going to save it, blow it up, print it out, and hang it from the flight deck door tomorrow at work...

...sigh...
