That's not how they look at it. What was was the upgrade time when you got hired? "5 years". How long did you stay? "3 years". Why did you you quit? "Upgrade time was taking too long, brand x was 8 months". So you knew it was 5 years the day you took the job and you didn't stay there and wait for what you agreed to when you took the job? Our upgrade time is 15years do you plan on leaving in 3 if brand x is only 8 and they hire you? "No sir" Well you have already proven that you would.

I had 10pm show and 12-4am sims and an hr debrief afterwards on the asa side.

I think the sim time on the back side of the clock is typically used for maintenance at most companies. Typically from 2 to 6 Am. Sometimes the briefing overlaps a bit

Delta does around the clock sims. It's the nature of the business.

On the Erj side, it's only done between 0230-0600 if both pilots agree. The only way they can do it involuntarily is if it's training after an unsat. In other words, not scheduled ahead of time. This is because usually the sim is already scheduled with regular training during normal hours.

That's like asking "why didn't you stay with your company until you were furloughed or the airline shutdown?"

If your response to why you left is "for the quick upgrade," and not along the lines of "to better/challenge myself through becoming a sim instructor, line check airman, getting into the safety department, etc.", then you deserve to not be hired.
