The availability date on my application was several months ago. Things have been planned that would probably conflict with a class date. Do they frown on not being as available as your initial application? Do I just update my availability on the application that bring to the interview?

You can defer one class for personal reasons (wedding, pre planned event, baby). After that you risk losing your cjo

Buddy of mine just finished Indoc. He was given a class date on 2nd day of interview. So don't worry about background check. Not your problem unless you have skeletons Delta doesn't know about.
