I think its because you really need either of those models to really make trans atlantic work with a neo and thats not in the plans for us.

There isn't a one for one replacement available. The company has stated 330s and 350s will replace 767 capacity. I think when you look to the future, a 767 sized aircraft is better than say a 321 neo LR and a 339 or 789 sized aircraft is better than a 763 for the same mission. So i think we can get by up gauging that 763 capacity to the A339 and not being dependent a 763 sized jet for the futre since we never really sent a majority of 757/321 sized aircraft across the pond. Point being, the replacement for the 763 that makes the most sense for us is an up sized one (A339), not necessarily one of the same size or smaller. Boeing has no plans for the 797 at this time. The 787-8 is too heavy and inefficient as a 767 replacement which is why it barely sells compared to the larger variants. The same is true of the A338; even more so in fact.

Boutique routes would be nice to bring back. The 321 seems the most likely option to fly those routes. However, they won’t be in Delta livery. Our GS and PWA both grant our partner carriers permission and disincentivize Delta to perform transatlantic NB flying.

we already have international Atlantic flights on NB airplanes (757) and some coming back. It would be simple to replace those rather than lose the route altogether. On top of growing the route structure back to what it was with the 757 routes that we lost over the Atlantic. I’m not saying replace 76ER routes with LR’s/XLR’s. I already said I was against that in another comment.

That's what I recall from the discussions I was a part of, albeit some tiem ago.
MAX was going to be transcon and support caribbean and florida flying. Part fo the NEO fleet would be ETOPs for reasons. With the 75 engine overhaul it will be intersting to see how this plays out MAX vs 75. The plan back then was for MAX to have the D1 configuration, is that still in the works?

The 321 is too small for DUB. I could see SNN this summer, possibly.
