Dumb question, but I have an interview soon. Does “pilot certificates” mean just current ones like my CFI? Or does that mean previous certs I’ve had?

All certificates held would be anything current.

Follow all the directions literally. That's part of the test.

All certificates you have. If it's on the FAA page listed as a current certificate, you should provide a copy of it.

Everyone goes home after indoc. I think you are guaranteed a minimum of 7 days off between indoc and when you start your aircraft training. You'll want every day of that as you'll be required to complete your systems home study in that break. 7 days is obviously doable but it's still tight. ~14 days is a much nicer break if you can land it.

As to hotels, I think your hotel during indoc is completely separate from your long term training hotel. Again with a week break I know of no one who doesn't go home. You get positive space to/from indoc, and during training you are allowed to positive space yourself to/from home at the start and end of training plus anytime you have 2 or more days off. Unless you change training sites (like going to MIA for a week) I think you just keep your hotel room assigned for the full length of training.

Without a really good excuse, like being inpatient in the hospital, I would expect so.

Anyone have any experience interviewing a 2nd time? Is it even worth wasting the time preparing again and such when they already turned you down?
