If they invite you to lunch to talk about the job DO NOT insist on buying.
They will grab the check. Just comfortably say Thank You at that moment and again when parting ways. Thank them for their time. Dont throw money down, dont even grab your wallet.
Anything along those lines becomes weird....

Since they are both doing me a favor by granting me face time, I'd probably wrap lunch up with "I really appreciate the info about how I might be able to come work with you. Since you were so nice to find the time to come and meet with me, can I buy you lunch?"
If they say "No- let me get it." Then graciously say something like "That's not necessary, but thank you very much!" and leave it at that! Don't insist, but don't presume anything either!
I'm never going to take offense if somebody offers to pay, unless they make a big deal out of it (let me pay, no let me pay, no really... etc).
If you're interviewing with a company and they take you to lunch during the process, I wouldn't offer to pay, but instead would let the people you are having lunch with take the lead when the check comes.

Just to clarify, this individual was not a friend or even an acquaintance. Instead he was somebody that sought me out (cold called) and requested some info about the company. Being a nice fellow and always willing to mentor somebody, I told him I'd be happy to meet for lunch. I didn't blind-side him, but told him "I'll see if one of the other pilots might come along- heck the managers are usually looking to get out of the office."
Some people just never were taught to think of every opportunity as a potential interview.

OK. I thought someone invited you to lunch with a Chief Pilot to talk about the job? Guess I missed that.
All Im saying is that in an interview type of lunch just say Thank You. Don't be offering to buy. Its business etiquette 101. If you REALLY want to offer to pay your share once, fine....just leave it be quickly after.
What you REALLY want to avoid is the "does this guy get it?" thoughts...as I have seen on lunch interviews in the past.
Don't be like a woman with her friends and push the issue of the check, we all know those guys aren't paying for it either, so lets not play like its costing anyone anything except time.
