Not a pilot, but owner (family has 2 planes (1 more on the way) and company has 1). The way we do it is nothing at all between 3am - 6pm when you’re on a rotation (we do 10 days on 10 days off) and never more than 1 drink an hour when on call outside of those hours. Rest period is your period, but we ask for the courtesy of using good judgement. We always try to give at the very minimum a 4 hour notice, and we pay salary. We also are happy to cover a drink or two during a meal during their rest period as part of per diem.

It gives enough time to sober up between 3am and 9am if there was a last minute trip to come up it would (95%) arise before 6pm. Obviously if the flight crew is expecting a trip they are expected to not drink before it.

I had a friend that worked for a large part 91 corporation. He had to be ready to go 8-5, M-F. After 5, he was free until the next workday at 8AM, unless something was scheduled in advance. If they were scheduled for a weekend flight, they would get a day off the next week for each weekend day worked. However, I never knew him to fly without knowing his schedule several days in advance.
I think just treating people fairly with reasonable rules goes a long way towards retaining good people.

I am certainly open to suggestion and tweaking things if you have a better way. I came to the forum to learn and try to understand the pilot/flight department side of things.
