I was on a flight for the regional I work for, the flight attendant working that a new start up called Astra Jet (?) will soon be operating out of Orlando with A330 and 767s. I will probably not have the flight time to get on as a first officer, but this is more for my wife. She is getting her application for permanent residency finished up, and wants to go back to being a flight attendant, this might be an opportunity for her. I'm trying to find out how she can apply for a FA position.

Don't hold your breath. It's not really a startup airline, rather maybe the idea of a start up commercial plan. Astrajet was a customer of Ryan International Airlines that bought the RIA certificate when it liquidated in bankruptcy back in January. Through inactivity they've squandered pretty much every authorization the certificate had to offer, and is about to lose the entire certificate while they've "tried" to get investors and capital together. They don't have their DOT fitness approval, and with one of the principals set to be sentenced in an SEC violations conviction, many believe that will never happen. They have big plans, but little ability!
Either way, I wouldn't count on being able to get on their yourself any time soon, Ryan's shutdown put many pilots out of work, many of which are still out of work. So they'd have to grow in size quite a bit before they'd ever have to go to the street for pilots. But if, and that's a very big IF, they managed to get something together, they would likely need FA's. Many of the Ryan FA's have moved on to other jobs/careers, and many more wouldn't move from the RFD/ORD area if they moved the operation to SFB. Also, AFA did not secure a provision in the purchase agreement that any Astrajet operation would include the Ryan FA's and their CBA, like the pilot leadership did. So it's unclear what they would do with the AFA group and their contract were they to actually start the operation up again.
