At a previous "Brand X" airline that flew both the 757/767; the pay rate was "blended" and based on the number of hours you flew each type in your bid month.
If you flew 80% 767 and 20% 757 you would get 80% of the line paid at 767 rate and 20% paid at 757 rate.
Not sure how this would go over in contract negotiations or an LOA, just an idea of how other folks do it.

American breaks out their pay by specific aircraft - ie. 767-300 pays most, 767-200ER a little less, 767 lower still, 757 least - contract breaks out pay based on max gross takeoff weight.
Difference is only about $5/hour between 767-300 and 757 though.
The pilots are typed to fly all 4 types of 767/757 - which one they actually fly depends on if they are International qual or Domestic, and what's on the schedule for that particular leg.
