Flying in Hawaii

You couldn't be more wrong about the limited options here! I've been in Hawaii for a while now and haven't had any problems getting a flying job. There is no ferry to get people from one island to the next, except between Maui, Molokai, and Lanai; Meaning there will always be a lot of airlines here. Lot's of times people need packages faster than waiting for it to come on a barge, so it's flown, hence why there are so many cargo outfits.
Just pulling from my memory here is a list of operators out here.
-Hawaiian Airlines(B717's, B767's, A330's)
-Island Air(ATR-72's and soon to be Q400's?)
-Empire Airlines(ATR-42's)
-Corporate Air(Fedex Feeder, c208's, B1900's, Shorts 330's)
-Aloha Air Cargo(Saab 340's & B737's)
-Makani Kai(Chieftains % C208's)
-Mokulele Airlines(C208's, soon to have 13 total all less than a year old)
-Trans Air(Shorts 360's, 737's, and a Convair, I think)
-Kamaka(C208's, DC-3, Old beech, not sure what)
-George's Aviation(Chieftains)
-Pacific Skydiving(C208's)
-AMR Air Hawaii(C90's)
-Hawaii Lifeflight(C90's)
I'm sure I'm forgetting one or two but as you can see there a lot. A couple of those however I would stay far away.
With your time I would recommend looking into Mokulele Airlines, I spent some time there and it is a great place to be a part of. As for the comment about single engine over water, the risk is very low.
Also as another poster stated about traffic. If you plan on living on Oahu you will have to deal with traffic, no doubt about it. But if you live on the windward side traffic is way less than commuting in from the west or east side. If you live on any other island you'll forget what traffic even is.
To me Hawaii still isn't just another place after living here for a few years. Everyday I wake up I still can't believe I live in a place as beautiful as this. There is no place I would rather live which is why I don't plan on ever leaving. I planned on only coming here for one year then I would leave for a regional, boy how things have changed. My outlook on life and what's important took a complete 180 since moving here. Hawaii is what you make of it. I had never visited Hawaii before I moved here but everyday is a vacation to me.
The majority of people are friendly, I have yet to run into any problems with any locals, in fact I hang out with quite a few. Peoples attitudes towards you will depend on your attitude toward them. Just be respectful of the culture and you'll be fine. Culture is HUGE in Hawaii. I've become quite fond of the culture.

As for the traffic, I lived in Boston for 10 years. So, I think I can survive the traffic in HI (I hope).

It's worse. HNL trades places with Los Angeles every other year for the number 1 worst traffic in the USA. Oahu is way too crowded. If you could swing it, aim for living on one of the other islands, which are like the HI that you see on the brochures.
