A commission (non pilot) is generally going to weigh more favorably than prior enlisted service. But it's not a huge deal either way, and enlisted service itself is a small bonus, shows you can be a team player and fit within certain lateral limits.

Career changers are fine, but for the top majors, they will consider your previous career as part of your "whole person" profile. Barista, waitress, low-end retail, forklift driver, not so great. Accountant, doctor, engineer, MBA, military officer, good fit. Although they'd probably want to be sure that somebody with significant alternate income potential (ex. doctor) likes aviation enough to stick with it. You can also get significant extra credit for past experience like pro/olympic athlete.
Again, this only applies to the top tier. Regionals/ULCC don't care about past careers as long as it was legal. Also note that in this context I'm talking about actual careers, ie something you did exclusively for a while. If you worked in retail, fast food, etc while attending school that's totally OK and expected. But a 50 y/o forklift driver who changes careers is probably not getting on with DAL.
