Renting a plane with "no-motion" coverage?
Here's the scoop,
My boss has a 1998 Maule M7 235c which has no in-flight coverage. I have worked for him for about 3 years now and have been dieing to fly the thing. I have non-owners insurance which does cover the estimated total value of the aircraft. Additionally, I have about 5 hours in the make/model and over 500hours in tail wheel/high performance aircraft along with Instrument/commercial/multi certificates. Would he be able to let me fly his plane without putting him at too much stake in the event of something happening?

If I was the owner, I sure as heck would let anybody fly it if it wasn't insured. Remember- if anything did happen, the injured parties will look for the deepest pockets.
If I was you, I'd want to make sure that 1) you have appropriate liability coverage and 2) your policy would cover any loss of hull.
